Egg Roll Wrappers

  • 4 large eggs
  • 4 oz cream cheese softened
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • Pinch of salt

Filling

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder adjust to taste
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil

Instructions
 

Filling

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic. Sauté until onions are translucent and garlic is fragrant, about 2-3 minutes.
  • Add the ground beef to the skillet. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Season the beef with paprika, cumin, chili powder, salt, and pepper. Stir well to combine. Remove from heat and set aside.

Egg Roll Wrapper

  • In a mixing bowl, beat the eggs and softened cream cheese together until smooth. Add coconut flour, baking powder, and a pinch of salt. Mix until a smooth batter forms.
  • Pour the batter onto the prepared baking sheet, spreading it out evenly into a thin layer with a spatula. Bake in the preheated oven for 10-12 minutes or until lightly golden brown and set.
  • Once the egg wrapper is cooked, remove it from the oven and let it cool slightly. Cut the wrapper into square or rectangular pieces, depending on the desired size of your egg rolls.
  • Place a spoonful of the ground beef filling onto each piece of egg wrapper, then top with a sprinkle of shredded cheddar cheese.
  • Roll up the egg wrapper tightly, tucking in the sides as you go, to form egg rolls. Place the rolled egg rolls seam side down on the baking sheet.
  • Return the egg rolls to the oven and bake for an additional 10-12 minutes, or until the egg rolls are golden brown and crispy.
  • Once done, remove from the oven and let cool for a few minutes before serving.
  • Serve the keto egg rolls hot with your favorite dipping sauce, such as sugar-free ketchup, mustard, or a spicy mayo.
