For the Chicken Fritters

  • 1 lb ground chicken
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)

For the Avocado Salsa

  • 2 ripe avocados, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 lime, juiced
  • Salt to taste

Instructions
 

  • In a large mixing bowl, combine ground chicken, shredded mozzarella cheese, almond flour, grated Parmesan cheese, egg, chopped parsley, minced garlic, smoked paprika, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  • Using your hands, form the mixture into small patties, about the size of a golf ball, and then flatten them slightly.
  • Heat olive oil in a large skillet over medium heat. Fry the fritters in batches, cooking for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove and place on a paper towel-lined plate to drain any excess oil.
  • While the fritters are cooking, combine diced avocados, chopped red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Gently mix until all ingredients are well combined.
  • Plate the chicken fritters and top them with a generous serving of avocado salsa. Optionally, garnish with additional chopped cilantro and a lime wedge on the side.
