  • 4 bone-in pork chops about 1-inch thick
  • 1/2 cup apple cider vinegar
  • 1/4 cup tomato paste
  • 2 tbsp Worcestershire sauce (sugar-free)
  • 2 tbsp Dijon mustard
  • 1 tbsp liquid smoke
  • 1 tbsp smoked paprika
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tbsp erythritol or other keto-friendly sweetener
  • Fresh parsley for garnish (optional)

Instructions
 

  • In a medium saucepan over medium heat, combine the apple cider vinegar, tomato paste, Worcestershire sauce, Dijon mustard, liquid smoke, smoked paprika, minced garlic, onion powder, ground cumin, and erythritol.
  • Stir the mixture until well combined. Bring it to a simmer and let it cook for about 5 minutes, stirring occasionally, until the sauce thickens. Adjust seasoning with salt and pepper to taste. Set aside.
  • Pat the pork chops dry with a paper towel. Rub them with olive oil, ensuring an even coating.
  • Season both sides generously with salt, pepper, and a little bit of smoked paprika for an extra smoky flavor.
  • Preheat a large cast-iron skillet or grill pan over medium-high heat. Once hot, add the pork chops to the pan.
  • Cook the pork chops for about 4-5 minutes on each side, basting occasionally with the prepared vinegar BBQ sauce, until they reach an internal temperature of 145°F (63°C).
  • Remove the pork chops from the heat and let them rest for a few minutes to allow the juices to redistribute.
  • Garnish with freshly chopped parsley if desired.
