  • 4 large Idaho potatoes
  • Vegetable oil for frying
  • 1 tsp lemon pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 cup shredded cheddar cheese
  • 1 cup crispy bacon bits
  • 1 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped jalapeños optional, for an extra kick
  • 1/2 cup diced tomatoes

Instructions
 

  • Peel and hand-cut the Idaho potatoes into thick strips.
  • Rinse the cut fries in cold water to remove excess starch.
  • Blanch the fries in boiling water for 3-5 minutes until slightly tender. Drain and let dry on a paper towel.
  • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • Fry the blanched fries in batches for about 3-4 minutes until they start to turn golden but are not fully cooked. Remove and let them air dry on a wire rack.
  • Increase the oil temperature to 375°F (190°C).
  • Fry the pre-cooked fries in batches until they are crispy and golden brown, approximately 3-5 minutes. Remove and drain on paper towels.
  • Toss the hot fries with the house seasoning blend of lemon pepper, garlic powder, and salt.
  • Preheat the oven to 400°F (200°C).
  • Spread the seasoned fries on a baking sheet.
  • Sprinkle shredded cheddar cheese generously over the fries.
  • Scatter crispy bacon bits evenly on top.
  • Place the baking sheet in the oven for 5-7 minutes until the cheese melts and starts to bubble.
  • Remove the fries from the oven and transfer them to a serving platter.
  • Dollop sour cream over the fries.
  • Sprinkle chopped green onions, diced tomatoes, and optional jalapeños on top.
