  • 1 lb Italian green beans trimmed and halved
  • 8 slices high-quality bacon cut into 1-inch pieces
  • 4 medium tomatoes diced
  • 4 cloves garlic minced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar optional, for finishing touch

Instructions
 

  • Trim and halve the Italian green beans. Dice the tomatoes and mince the garlic. Cut the bacon into 1-inch pieces.
  • Heat a large skillet over medium heat. Add the bacon pieces and cook until crispy. Remove the bacon using a slotted spoon and set aside, leaving the bacon fat in the skillet.
  • Add the minced garlic to the skillet and sauté until fragrant, about 1 minute. Be careful not to burn the garlic.
  • Add the Italian green beans to the skillet and sauté for 5-7 minutes until they start to soften.
