  • 1 pound ground beef
  • 0.5 pound Italian sausage, casings removed
  • 1 large onion, diced
  • 1 large green bell pepper, diced
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 tsp kosher salt divided
  • 0.5 tsp black pepper
  • 1 pinch red pepper flakes
  • 3 large eggs
  • 1 cup Greek yogurt
  • 1.5 tsp baking powder
  • 0.5 cup almond flour to keep ketogenic-friendly
  • 0.5 cup grated Parmesan cheese
  • 0.25 pound provolone cheese, sliced
  • 1 cup diced scallions
  • 1.5 cups shredded mozzarella cheese

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef and Italian sausage until browned and fully cooked. Break up the meat as it cooks.
  • Add the diced onion and green bell pepper to the skillet and cook until softened, about 5 minutes. Stir in the tomato paste, dried basil, dried oregano, kosher salt, black pepper, and red pepper flakes. Cook for another 2 minutes until well combined.
  • In a medium bowl, whisk together the eggs, Greek yogurt, 1/2 teaspoon of kosher salt, and baking powder until smooth. Add the almond flour and grated Parmesan cheese, whisking until evenly mixed.
  • In a greased 9-inch pie dish, spread half of the meat mixture evenly on the bottom. Layer with half of the provolone cheese slices and half of the diced scallions. Pour half of the egg mixture over this layer. Repeat with the remaining meat mixture, provolone cheese, and scallions. Pour the remaining egg mixture on top.
  • Sprinkle the shredded mozzarella cheese evenly over the top of the assembled pie.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pie is set in the center.
  • Allow the pie to cool for about 10 minutes before slicing and serving. Enjoy your hearty, Italian-inspired dinner!
