  • 2 pounds ground chicken
  • 1 cup marinara sauce divided
  • 4 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 2 tsp Italian seasoning
  • 2 tsp onion powder
  • 1 ½ tsp sea salt
  • ½ tsp black pepper
  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella cheese divided
  • 1 cup shredded Parmesan cheese divided
  • 2 tbsp chopped parsley
  • 2 tsp chopped fresh chives
  • 1 clove garlic minced
  • ½ tsp sea salt

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the ground chicken, minced garlic, chopped fresh parsley, Italian seasoning, onion powder, 1 ½ teaspoon sea salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  • In a separate bowl, mix together the ricotta cheese, ½ cup shredded mozzarella cheese, ½ cup shredded Parmesan cheese, chopped parsley, fresh chives, minced garlic, and ½ teaspoon sea salt.
  • On a piece of parchment paper or a clean surface, flatten the meat mixture into a rectangle, about 1 inch thick. Spread the cheese filling evenly over the meat, leaving a small border on all sides. Carefully roll the meat and cheese mixture into a loaf, sealing the edges to enclose the filling.
  • Transfer the meatloaf to a baking dish and cover it with half of the marinara sauce. Bake in the preheated oven for 45 minutes.
  • Remove the meatloaf from the oven and top it with the remaining marinara sauce. Sprinkle the remaining ½ cup shredded mozzarella cheese and ½ cup shredded Parmesan cheese over the top. Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Allow the meatloaf to rest for 5-10 minutes before slicing. Garnish with additional chopped parsley if desired and serve warm.
