  • 1 medium-sized watermelon
  • 1 packet watermelon-flavored gelatin (vegetarian-friendly) (3 oz)
  • 1 cup white grapes halved
  • 1 cup blue grapes halved
  • 1 cup raspberries
  • 1 cup blueberries
  • 2 kiwis peeled and sliced

Instructions
 

  • Cut the watermelon in half lengthwise. Scoop out the flesh from both halves, leaving a thick rind to act as a bowl. Set aside the watermelon flesh for another use.
  • Place the hollowed-out watermelon halves in the fridge to chill.
  • In a small saucepan, bring 2 cups of water to a boil. In a large mixing bowl, combine the watermelon-flavored gelatin powder with the boiling water. Whisk until fully dissolved. Add 1 cup of cold water to the mixture and stir well. Allow the gelatin mixture to cool to room temperature but not set.
  • While the gelatin cools, wash all fruits thoroughly. Halve the white and blue grapes. Peel and thinly slice the kiwis. Set aside the raspberries and blueberries.
  • Once the gelatin mixture has cooled, gently fold in the halved grapes, raspberries, blueberries, and kiwi slices. Pour this fruit and gelatin mixture into the chilled watermelon rinds.
  • Carefully place the filled watermelon halves in the refrigerator. Allow them to chill and set for at least 2 hours, or until the gelatin is firm.
  • Once set, remove the watermelon halves from the fridge. Using a sharp knife, cut the filled watermelon halves into quarters or wedges for serving.
  • Enjoy this refreshing and visually stunning dessert!
