Ingredients
 
 

Dumplings

  • 24 dumpling wrappers preferably round
  • 200 g shrimp peeled, deveined, and finely chopped
  • 200 g ground pork
  • 1 cup chives finely chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1 egg beaten (for sealing)
  • 4 tbsp Tobiko flying fish roe

House Dumpling Sauce

  • 4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp gochujang Korean chili paste
  • 1 tsp sesame oil
  • 1 tsp toasted sesame seeds

Dessert Garnish

  • 1/2 cup fresh fruit e.g., strawberries, kiwi, or blueberries, finely diced
  • 1/4 cup sweetened condensed milk
  • 1 tbsp toasted black sesame seeds
  • Mint leaves for garnish

Instructions
 

  • In a large mixing bowl, combine the finely chopped shrimp, ground pork, chives, garlic, ginger, soy sauce, sesame oil, and sugar. Mix thoroughly until evenly combined.
  • Place a dumpling wrapper in the palm of your hand. Spoon about 1 tbsp of the filling onto the center of the wrapper. Lightly brush the edges of the wrapper with the beaten egg. Fold the wrapper in half to create a half-moon shape, ensuring the edges are well-sealed. Gently press the dumpling to flatten it slightly for an open-faced appearance. Repeat with the remaining wrappers and filling.
  • Heat a large non-stick skillet over medium-high heat and add a little vegetable oil. Place the dumplings flat side down in the skillet. Cook until the bottoms are golden brown, about 2-3 minutes. Add 1/4 cup of water to the skillet and cover immediately. Steam for 5-6 minutes or until the shrimp and pork are fully cooked.
  • In a small bowl, mix together soy sauce, rice vinegar, honey, gochujang, and sesame oil. Stir well to combine. Sprinkle with toasted sesame seeds.
  • Arrange the cooked dumplings on a serving plate. Drizzle with sweetened condensed milk. Spoon the finely diced fresh fruit over the dumplings. Sprinkle with toasted black sesame seeds. Garnish with mint leaves.
  • Just before serving, top each dumpling with a small spoonful of Tobiko for a pop of color and an extra burst of texture.
