  • 2 large red bell peppers
  • 3 tbsp monk fruit sweetener

  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 8 toothpicks

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Cut the red bell peppers into quarters, removing the seeds and white membranes. Slice each quarter into 1-inch wide strips, then cut those strips into bite-sized pieces.
  • In a mixing bowl, combine the bell pepper pieces with smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Toss until evenly coated.
  • Cut each slice of vegetarian bacon in half, lengthwise. Wrap each seasoned bell pepper piece with a strip of vegetarian bacon and secure with a toothpick.
  • Lightly sprinkle the monk fruit sweetener over the prepped bell pepper "bacon" bites, ensuring even distribution for a subtle caramelized effect.
  • Line a baking sheet with parchment paper and place the bacon-wrapped bell pepper bites on it.
  • Bake in the preheated oven for 15 minutes, then flip each piece and bake for an additional 10 minutes, or until the vegetarian bacon is crispy and the bell peppers are tender.
  • Remove from oven, let cool slightly, and serve warm as a mouthwatering appetizer.
